My ex-father-in-law, Leo DeCapua was one of the most gentle and kind souls that walked the planet. He was a retired butcher when I met him, and he taught me to cook. As a young bride, I had literally no cooking experience.
He cooked beautiful food, real food. Before all the low-carb, low-calorie, low sugar, non-nutritional, and no flavor trends became vogue. He was an original Mediterranean Chef.
He took great pride on choosing meats for meal preparation, and on Saturdays, I would pick him up and we would go to the grocery store. Sometimes two, depending on how the meat looked at the first store.
We would buy all the ingredients necessary for one of his delicious recipes and then he would spend the morning and early afternoon at our house making one of his wonderful dishes. I was his sous chef. I chopped, diced, sliced, or whatever else he told me to do, along with a tablet and pen to write down everything he did, as Leo never measured anything. “Three times around the kettle with the salt, pepper and parsley” was a measurement.
I was thrilled at the tender age of 22 to be able to cook a delicious meal from scratch. And from that magical time in my life to now, Leo has inspired me to cook. Since then, there have been many recipes I have tried, borrowed, stolen, or created. Some are included in my first cookbook: “When The Harlor Women Cook”. But I can tell you, that not many dishes will come close to the wonderful recipes that Leo taught me. I hope your enjoy them as much as I have, and as much as Leo did teaching them to me.
